The process of making a chilli powder at home is quite intensive. Several types of chillies are picked, sorted, cleaned and dried under sun. The chillies needs to be crisp. It is then roasted with other ingredients and powdered in a local mill.
In this powder, there are three types of dry red chillies used - byadagi chilli, guntur chilli, and bird's eye chilli.
Byadgi chilli is mainly grown in the Karnataka - a southern state of India. It is known for its deep red enriching color and less spicy in comparison to other chillies.
Guntur chilli is mainly grown in Andhra Pradesh - yet another southern state of India. It is quite an important ingredient in most of the curries. This chilli is known for its heat. It is a very spicy chilli.
Bird's eye chilli is a very common chilli used in south east asian countries. It is again known for its heat.
