 Intian keittiö on täynnä värejä, makuja ja tuoksuja – eikä vähiten sen mausteilta. Intiassa maustekauppa on ollut merkittävä osa kulttuuria jo tuhansien vuosien ajan, ja intialaiset mausteet ovatkin löytäneet paikkansa kuluttajien ympäri maailmaa.

Maustekaupan ja historian vaikutus intialaiseen keittiöön

Mausteiden kauppa on vaikuttanut intialaiseen keittiöön monin tavoin, niin makumaailman kuin ruokakulttuurinkin osalta. Mausteet ovat tuoneet keittiöön uusia makuja ja vivahteita, ja samalla tuoneet maailmaan uutta tietoa intialaisesta kulttuurista.

CCF Tea - Ancient Ayurveda's miracle detox tea

Try this ayurvedic tea with just a few spices that you can find easily in the stores. 

This unique tea blend has backing in Ayurveda. Hailed as a 'miracle tea', CCF tea is helpful in absorbing nutrients, stimulating agni (digestive fire), dealing with chronic problems of indigestion, flatulence and also soothing any inflamed membranes in and around the stomach walls.

As the name says CCF is a combination of cumin, corainder, and fennel seeds. Cumin has been used for centuries to balance out digestive issues in Indian households. It blends well with the medicinal properties of coriander to decrease the heat in the body. It has also been referred to as a soothing spice to relax any anxiety. The medicinal properties of the spice helps with reducing muscle cramps and improving blood circulation. Fennel, again, is a therapeutic traditionally used herb. It is often referred to as the magic remedy to deal with any bloating issue. 

Ingredients: 
1 tsp fennel seeds/fenkolinsiementä
1 tsp coriander seeds/korianterinsiemeniä   
1 tsp cumin seeds/juustokuminaa 
1.5 cup of water/vesi

Add these ingredients and bring it boil. let it boil for 5-10 minutes depending on how strong you want your tea. Strain it well so as to ensure that the spices blend infuses well in the drink. Your drink is ready. I add 1/2 tsp of brown sugar, milk and consume it every day morning :)

First course

Appetizer: Samosa, onion pakoras with different kind of chutneys

Second course

Main dish options: Dal Fry with pickles, salad, papad and achari aloo (spicy potatoes) or Kosha Chicken with saag paneer. Chapathi. 

Third course

Dessert: Halwa (Sweet Dish Indian) (Semolina)


Homemade Biryani Masala

The below recipe is an exotic blend of ground spices that results in a quite strong and aromatic spice powder which you can use for biryani, puloa or literally any dish you want to spice up :) You can also store this spice powder in an air tight container.

 
              

Ingredients: 

  • 3 kashmiri red chilli (dried)/kashmirin punaista chiliä (kuivattu)
  • 2 tbsp coriander seeds/korianterinsiemeniä                   
  • tbsp cumin/juustokuminaa 
  • 3 mace/muskottikukkaa 
  • 2 inch cinnamon stick/kanelitankoa
  • 1 nutmeg/muskottipähkinä
  • 1 tsp cloves/mausteneilikkaa
  • 3 black cardamom/mustaa kardemummaa
  • 3 star anise/aniksensiemeniä
  • 10 cardamom/kardemummaa
  • 1 tbsp pepper/pippuria
  • 1 tsp fennel/fenkolinsiementä
  • ½ tsp turmeric/kurkumaa

Procedure:

Dry roast all the spices in a low flame for 3-4 minutes(until you get the aroma), and use a mixer/grinder to make a fine powder of it. 

Kuivapaahda kaikkia mausteita miedolla lämmöllä 3-4 minuuttia (kunnes haistat aromit) ja tee niistä hieno maustesekoitus sekoittimella/myllyllä.
